The best above ground pool landscaping plants are low-mess, splash-tolerant, and not too thorny. Ornamental grasses, dwarf shrubs, agave in warm climates, and tidy evergreens are all solid options.
I avoid anything that drops tons of leaves or has aggressive roots near the pool base. Cleanup gets old real fast.
Layer for depth
Use a mix of taller anchor plants, medium fillers, and low edging plants to create that lush, curated look. Even a few container plants by pool can make a huge difference if planted with intention.
